Cinnamon - Indonesian, cassia, organic

Indonesian cinnamon, or cassia, has a more pungent aroma and robust flavour than Sri lankan so is excellent in curries and other dishes where it has other strong flavours to compete with. It can, however, be use din mixed psice for baking or alone - it really depends on what you prefer.
